A great side option that can be made vegan or non-vegan to pair with any dinner!
1 head cauliflower chopped
½ cup vegan shredded cheese
¼ plant-based milk of your choice – original flavor
2 tablespoon butter/vegan butter
Place a large saucepan filled with 3 quarters full of water over high heat and boil.
Blanch cauliflower until tender – about 6/7 minutes and drain.
Transfer cauliflower to a food processor add the vegan cheese, plant-based milk and butter. Puree till very creamy and whipped. Add seasonings and enjoy.
