Recipe: Roasted Root Vegetables in a Garlic and Herb Sauce

A simple, healthy and delicious recipe, from us, to you!

Ingredients:
Root vegetables, vegetables: sweet potatoes, parsnips, plantains, carrots
Olive oil
Unsweetened almond milk
Garlic powder
A mixed herb seasoning (e.g. Trader Joe’s 21 Salute Seasoning)
Salt and pepper

A variety of vegetables can be used in this recipe, just cut them to a similar size. Suggested vegetables are sweet potatoes, plantains, carrots, parsnips.

Preheat oven to 400 degrees. Place the chopped veggies on a baking sheet. Coat with olive oil, a few table spoons of unsweetened almond milk, garlic powder, herb seasoning and salt and pepper (to taste). Bake until veggies are tender (about 45 minutes). Enjoy alongside some form of protein; tastes great with a Sunday roast!
