Herbed Turkey Meatballs in Simple Tomato Sauce

Ingredients

1-pound ground turkey

3 large tomatoes (skinned and chopped)

½ tsp of the following herbs – oregano, basil, cilantro, dill (optional)

1 onion sautéed

½ tsp turmeric

1 clove of garlic – finely minced

Salt/pepper/cayenne pepper to taste

EVOO for sautéing 

Splash of vinegar of your choice

Splash of water

Recipe

In a saucepan, add the EVOO, sauté the onions and garlic until lightly golden brown.  Adding the turmeric and herbs and let the herbs toast for 1 minute, set aside and cool.

In a bowl mix the ground turkey and cooled onion and herb mixture and set aside for about 30 minutes to marry. Form small two-inch turkey balls and sauté in the same pan (adding more oil) on medium heat until cooked through. Remove the turkey balls and add the chopped tomatoes, salt and pepper(s) and let it cook and deglaze the pan. Add a splash of vinegar and water and check the simple tomato sauce’s seasoning. Add the turkey meatballs into the simple tomatoes sauce and gently smother the turkey meatballs with the cooked tomato sauce. You can serve this with rice, mashed potatoes or on a salad.
