Salmon Stuffed Grilled Avocados

This is a delicious recipe that was passed to me by a good friend, and is easy to make, healthy, and tastes good!


1 large avocado

½ tsp fresh lemon or lime juice

4 ½ ounce of cooked salmon

½ cup vegan mayo or any mayo you prefer

¼ cup roasted peppers

¼ cup chopped fresh tomatoes

1 teaspoon fresh cilantro

Fresh salt/ pepper/cayenne to taste

½ tsp roasted pumpkin seeds



Cut the avocado in half, brush with EVOO, sprinkle with salt and pepper and grill to get light char marks.

In a medium bowl, add all ingredients together, season to your liking and refrigerate until serving.

To serve – divide the salmon mixture into the avocados, add more pumpkin seeds on top and enjoy.
